In most countries like Kenya, it has become mandatory. Raw milk must be cooled at 100c or below within 4 hours of commencement of milking and be cooled at 60c of milking or 2 hours from completion of milking and be held at or below 60c without freezing and must not exceed 100c during subsequent milkings.
